So naturally I needed to give it a try on cupcakes. And guess what? It is even better than I expected. These Biscoff cupcakes have quickly become a new family favorite. We find every excuse to make a batch of them.

So if you are ready for a life changing dessert, keep reading!

Biscoff Cupcake Recipe:

Aren’t they so cute? I love the way they look with a Biscoff sandwich cookie on the top, and the cookies are really good.

Here’s what you’ll need from the store.

Shopping List:

• White Cake Mix
• Large Box Vanilla Pudding
• Vegetable Oil
• Sour Cream
• Eggs
• Vanilla
• Biscoff Cookie Butter
• Biscoff Cookies (Optional)
• Powdered Sugar
• Butter
• Milk
• Cupcake Liners

Delicious Biscoff Cupcake Recipe

Ingredients

Cupcakes:

• 1 White Cake Mix
• 1 Large Box Vanilla Pudding
• 1/2 Cup Water
• 1 Cup Vegetable Oil
• 1 Cup Sour Cream
• 4 Eggs
• 1 TBSP Vanilla

Frosting:

• 3 Sticks Butter
• 1 Cup Biscoff Cookie Butter
• 4–5 Cups Powdered Sugar
• 5 Tsp. Milk

 

Instructions

Cupcakes:

• Preheat Oven 350 degrees
• With a mixer, mix all of the ingredients together until well blended
• Scoop into 24 cupcake liners, filling them 3/4 of the way full
• Bake at 350 degrees for 18 Minutes

Frosting:

• Soften butter and add to mixing bowl
• Add Biscoff Cookie Butter and milk to the bowl and mix together with butter
• Add powdered sugar to mixture one cup at a time. Mix until you have the desired consistency. I like it on the thicker side so it holds it’s shape when piped on the cupcake.
• Fill a plastic bag with frosting and cut the corner to pipe frosting on the cupcake. Make sure cupcakes are completely cooled before frosting.
• Add Biscoff cookie to the top (optional)

Pro Tips:

• The consistency of the frosting matters a lot. If it’s too thin it won’t pipe on the cupcake and hold it’s shape. Go on the thicker side.
• Make the cut in the baggie smaller to start. You can always cut more if needed. If you do too big of a slit it’s harder to control the frosting.
• Place your cookie right after you frost the cupcake. The frosting will start to set up pretty quick.
• Once your cupcakes are cooled place them in another liner for a cuter look.

If you want to simplify the process you can simply make the cake as directed on the cake mix. Adding the pudding and sour cream makes the cupcakes extra moist and so yummy.

Simply Delicious Peach Cupcakes

Ingredients

Cupcakes:

• 1 White Cake Mix

Peach Frosting:

• 3 Sticks of Butter
• 4–6 Cups Powdered Sugar
• 1/4 Cup Milk
• 1 Tsp. Peach Extract
• Orange Food Coloring
• Peach Rings

Instructions

Cupcakes:

• Preheat Oven 350 degrees
• With a mixer, mix all of the ingredients together until well blended
• Scoop into 24 cupcake liners, filling them 3/4 of the way full
• Bake at 350 degrees for 18 Minutes

Peach Frosting:

• Soften Butter and add to the mixer
• Combine with Milk
• Start to add the powdered sugar. Start with 4 Cups and add until you achieve the desired thickness. (If you are piping it on the cupcakes you will want it on the thicker side)
• Add your peach extract. If it’s not quite peachy enough for you add another 1/4 tsp. of the extract.
• Fill a plastic bag and cut the corner of the bag to create a piping bag. This will save you come clean up time. Pipe the frosting on the cupcake and top with a peach ring gummy.

Because that’s my idea of perfection and have found heaven with these mini ice cream cupcakes. And what’s even better? Using Peanut Butter & Cocoa Pebbles (what?! That’s a thing now?!) for the crust. Seriously, so good, and perfect combination of peanut butter and chocolate.

These mini ice cream cupcakes are so simple and a definite crowd pleaser, they will be in high demand at every gathering.

Seriously-when I heard about these new Peanut Butter & Cocoa Pebbles (which can be found at Walmart), I knew I had to make something with it because… YUM!

Easy Mini Ice Cream Cupcakes:

Are you ready to dig in? Once you take a bite, you won’t want to stop. And the cherry (or rather the candy) on top is how simple these little beauties are to make. Let’s get started. Ingredients: I found everything I needed at our local Walmart, it made shopping super simple!

• 2 1/2 Cups Peanut Butter & Cocoa Pebbles Cereal (Found at participating Walmart stores. You earn $1 cash back if you sign up here!)
• 1 Cup Shelled Peanuts
• 1/2 Cup Melted Butter
• 1 Cup Brown Sugar
• Soft Vanilla Ice Cream
• 1/2 Cup Melted Peanut Butter
• 1/2 Cup Chocolate Sauce or Hot Fudge
• Whip Cream
• Chocolate & Peanut Butter Candy (optional)

Let’s get cooking, or rather, let’s get freezing!

Instructions:

Crust-

• Mix together the Peanut Butter & Cocoa Pebbles, shelled peanuts, and brown sugar in a bowl.

• Add melted butter and mix together. Mixture will be loose.

• Scoop a layer into greased muffin tin and press down.

• Add vanilla ice cream on top of the crust filling each tin to the top. Smooth the top of the ice cream and give the muffin tin a slight tap to get rid of air bubbles.
• Place in the freezer for at least an hour, or until completely frozen.
• Once frozen, drizzle top of the ice cream with chocolate sauce.
• To get the cupcakes out of the muffin tins, simply use a knife and cut them away from the side of the tins. They will pop right out.

• Top with whipped cream, drizzled chocolate sauce, melted peanut butter, and candy.
• Grab a spoon and dig in!!

Instructions

• Mix together the Peanut Butter & Cocoa Pebbles Cereal, peanuts, and brown sugar.

• Place a scoop full in the bottom of a greased muffin tin and press in firmly. (You can also make these in a 9×13 pan)
• Top the tins off with vanilla ice cream, filling them to the top.
• Smooth out ice cream, and tap the tins to release extra air.
• Freeze for at least one hour, or until completely firm.
• Spread chocolate sauce over the top of each cupcake.
• To release the cupcakes from the tin, simply glide a knife around the edges and they will pop right out.
• Top with whip cream, drizzled peanut butter, chocolate sauce, and candy.

• 3 Sticks of softened butter
• 4–6 Cups of powdered sugar
• About a 1/3 cup milk
• 2 tsp. coconut extract

Instructions

Beat butter until smooth.

Add milk and powdered sugar. Begin with 4 C of powdered sugar and add more as needed to reach desired consistency. (Should be fairly thick but not so thick that you won’t be able to squeeze it out of a piping bag to frost.)

Add coconut extract and mix in thoroughly.

Spoon into a ziplock bag.  Snip the corner of the bag and squeeze the frosting on the cupcakes.

Top with a slice of lime…and enjoy!

This combines my two favorite loves in life…cupcakes and Coke!  Is there anything better in life than a cherry Coke, except maybe a cherry Diet Coke!  These Cherry Coke Cupcakes were so fun to make and turned out so adorable.  They are almost too cute to eat…almost!  They have a delicious Coke Cupcake topped with Cherry Icing, making a perfect combination. Cherry Coke Cupcake Frosting

Ingredients

• 3 Sticks of Soft or Partially Melted Butter
• 4–6 Cups Powdered Sugar
• 6–8 Tbsp. Maraschino Cherry Juice (Flavor to Taste)

Instructions

Mix butter and powdered sugar together.

Add in the Maraschino Cherry Juice and mix.

You may have to add more liquid or powdered sugar until you get the consistency you want.  If you are piping frosting onto the cupcakes, you will want your frosting a little on the thick side.

Spoon your frosting into a ziplock bag and clip the corner of the bag making an opening big enough your frosting will squeeze through.  Swirl the frosting on the top of your cupcakes.

Top with a Maraschino Cherry and a straw.

You know that moment when you get an idea and it’s a really cool idea and you get really excited about it to the point that you maybe make a little bit of a fool of yourself? And it’s embarrassing but you’re just excited?

That was me when I was standing in the party store and this idea started to come to me. I saw this fun black plate for Halloween and then the cute orange goblet with it and knew I could create a pretty awesome Halloween Cupcake Stand with it. And I got pretty excited in that moment.

And I knew we had cute witch cupcakes that needed a happy place to call home and it all came together so great!

The best news though? It cost under $10 to make this Halloween cupcake stand and only takes about 1 minute!

I used this at my Witch’s Night Out Party and added really cute Witch Cupcakes to them:

Witch Cupcakes for Halloween:

These are super simple to make. Here’s what I did.

Supplies Needed:

• Cupcakes (this is our favorite recipe)
• Witch Hat Cutouts
• Purple Frosting
• Purple Sprinkles
• Purple Glitter
• Straws
• Tape

To make the witch hat Halloween cupcake topper cutouts, I just found a witch hat clipart online and cut around it.

Then I added purple glitter to it and taped them onto a cut straw.

Pipe on the purple frosting and add your toppers!

Halloween Cupcake Stand Tutorial:

Supplies Needed:

• Platter
• Cup/Goblet
• Hot Glue

I found our platter and goblet at Zurchers in the Halloween section. You can get creative here and find any combo of plate and cup to make this.

I also want to note that mine isn’t super sturdy because of the nature of the goblet I used. That zig zaggy bottom looks cute, but makes the cupcake stand a little wobbly. If you want something more solid, use a more sturdy cup for the bottom.

Here’s how I made it.

Turn your plate over and trace the outer rim of your cup/goblet on the bottom.

Put hot glue on the part you just traced.

Add your cup and allow it to cool.

And you’re done! It’s that easy.

Cupcakes are a favorite around here. They are so cute and taste so great and make any occasion that much better! These lemonade cupcakes are perfect for a Spring or Summer day. A little taste of lemonade on a cute little cupcake with a little straw on top!

Lemonade Cupcake Recipe:

Here are the 3 cupcake recipes and the buttercream is below them. I’ve also included some printable recipe cards just for fun! So you’ve got the list of ingredients for each and then the instructions down lower.

Raspberry Lemonade Cupcakes:

Ingredients:

• 1 white cake mix
• 1 large package of vanilla instant pudding
• 1 C vegetable oil
• 1/2 C raspberry juice from crushed raspberries
• 1 C sour cream
• 4 eggs
• 1/2 tsp rasberry flavoring (in the candy dept at the craft store)
• Raspberries to top
• Lemon extract for frosting

Strawberry Lemonade Cupcakes:

Ingredients:

• 1 lemon cake mix
• 1 large package of vanilla instant pudding
• 1 C vegetable oil
• 1/2 C water
• 1 C sour cream
• 4 eggs
• Strawberries to top
• Strawberry flavoring for frosting

Lemonade Cupcakes:

Ingredients:

• 1 lemon cake mix
• 1 large package of vanilla instant pudding
• 1 C vegetable oil
• 1/2 C water
• 1 C sour cream
• 4 eggs
• Lemon extract for frosting
• Lemons to top

Cupcake Instructions:

The basic instructions are the same for each of these three cupcakes.

Preheat oven to 350 degrees.

Combine cake mix, pudding mix, oil, water (or in raspberry ones, raspberry juice), sour cream, and eggs and beat till smooth.

Fill 24 cupcake liners with batter.

Bake for 18-20 minutes (for me it’s exactly 18 but ovens can vary). The raspberry ones might need a minute or two longer than the others.

Buttercream Frosting Recipe:

Ingredients:

• 3 sticks softened butter
• 4-6 C powdered sugar
• 1/4 C milk
• Food coloring (pink for the strawberry ones, yellow for the lemon and raspberry ones)

Instructions:

Beat butter, powdered sugar, and milk. If it seems too thick, add a tiny bit more milk. Too runny? Add a little more powdered sugar.

For the raspberry and lemon flavors, add about 1-2 tsp of lemon extract to the frosting to flavor. For the strawberry add 2-3 tsp strawberry extract to taste.

Then add your food coloring.

If you want to swirl the colors on the lemonade ones, here’s how. (There’s a video to show you.)

To pipe it on, I simply put the frosting in a gallon size ziplock bag, snip off one corner and swirl it on. Then top with the fruit and the straw if you want.

And serve!
