Cupcakes are a favorite around here. They are so cute and taste so great and make any occasion that much better! These lemonade cupcakes are perfect for a Spring or Summer day. A little taste of lemonade on a cute little cupcake with a little straw on top!

Lemonade Cupcake Recipe:
Here are the 3 cupcake recipes and the buttercream is below them. I’ve also included some printable recipe cards just for fun! So you’ve got the list of ingredients for each and then the instructions down lower.
Raspberry Lemonade Cupcakes:
Ingredients:
- 1 white cake mix
- 1 large package of vanilla instant pudding
- 1 C vegetable oil
- 1/2 C raspberry juice from crushed raspberries
- 1 C sour cream
- 4 eggs
- 1/2 tsp rasberry flavoring (in the candy dept at the craft store)
- Raspberries to top
- Lemon extract for frosting

Strawberry Lemonade Cupcakes:
Ingredients:
- 1 lemon cake mix
- 1 large package of vanilla instant pudding
- 1 C vegetable oil
- 1/2 C water
- 1 C sour cream
- 4 eggs
- Strawberries to top
- Strawberry flavoring for frosting
Lemonade Cupcakes:
Ingredients:
- 1 lemon cake mix
- 1 large package of vanilla instant pudding
- 1 C vegetable oil
- 1/2 C water
- 1 C sour cream
- 4 eggs
- Lemon extract for frosting
- Lemons to top
Cupcake Instructions:
The basic instructions are the same for each of these three cupcakes.
Preheat oven to 350 degrees.
Combine cake mix, pudding mix, oil, water (or in raspberry ones, raspberry juice), sour cream, and eggs and beat till smooth.
Fill 24 cupcake liners with batter.
Bake for 18-20 minutes (for me it’s exactly 18 but ovens can vary). The raspberry ones might need a minute or two longer than the others.
Buttercream Frosting Recipe:
Ingredients:
- 3 sticks softened butter
- 4-6 C powdered sugar
- 1/4 C milk
- Food coloring (pink for the strawberry ones, yellow for the lemon and raspberry ones)
Instructions:
Beat butter, powdered sugar, and milk. If it seems too thick, add a tiny bit more milk. Too runny? Add a little more powdered sugar.
For the raspberry and lemon flavors, add about 1-2 tsp of lemon extract to the frosting to flavor. For the strawberry add 2-3 tsp strawberry extract to taste.
Then add your food coloring.
If you want to swirl the colors on the lemonade ones, here’s how. (There’s a video to show you.)
To pipe it on, I simply put the frosting in a gallon size ziplock bag, snip off one corner and swirl it on. Then top with the fruit and the straw if you want.
And serve!
