This combines my (Danetta talking here) two favorite loves in life…cupcakes and Coke! Is there anything better in life than a cherry Coke, expect maybe a cherry Diet Coke! 😉 These Cherry Coke Cupcakes were so fun to make and turned out so adorable. They are almost too cute to eat…almost! They have a delicious Coke Cupcake topped with Cherry Icing, making a perfect combination.

How yummy do these look? I can’t think of anything better on a summer day than sitting on my porch eating one of these delicious cupcakes. And sipping a cherry Coke would be the “cherry” on top! 😉

Cherry Coke Cupcakes
- Prep Time: 10 min
- Cook Time: 18 min
- Total Time: 28 minutes
- Yield: 24 Cupcakes 1x
- 1 White Cake Mix
- 1 Large Box Vanilla Pudding Mix
- 1/2 Cup Water
- 1 Cup Vegetable Oil
- 1 Cup Sour Cream
- 1 Tbsp. Vanilla
- 4 Eggs
- 2 1/2 tsp. Cola Extract
Preheat oven to 350 degrees.
Mix the 8 ingredients together until smooth.
Spoon into 22-24 cupcake liners.
Bake for approximately 18 minutes, give or take a couple minutes.
Allow to cool and then they will be ready to frost.
Cherry Coke Cupcake Frosting
- 3 Sticks of Soft or Partially Melted Butter
- 4–6 Cups Powdered Sugar
- 6–8 Tbsp. Maraschino Cherry Juice (Flavor to Taste)
Mix butter and powdered sugar together.
Add in the Maraschino Cherry Juice and mix.
You may have to add more liquid or powdered sugar until you get the consistency you want. If you are piping frosting onto the cupcakes, you will want your frosting a little on the thick side.
Spoon your frosting into a ziplock bag and clip the corner of the bag making an opening big enough your frosting will squeeze through. Swirl the frosting on the top of your cupcakes.
Top with a Maraschino Cherry and a straw.
