A Peek at the Fun: Looking for a fun and simple dessert idea? How about these easy mini ice cream cupcakes? Chocolate and peanut butter cereal in a yummy crust topped with ice cream, hot fudge, whipped cream, peanut butter, and candy. You’ll love it!

If you had to pick two of the all-time best food combos what would you choose? Did you say chocolate and peanut butter? We bet you did! Come on-did you?

Because that’s our idea of perfection and have found heaven with these mini ice cream cupcakes. And what’s even better? Using Peanut Butter & Cocoa Pebbles (what?! That’s a thing now?!) for the crust. Seriously, so good, and perfect combination of peanut butter and chocolate.

These mini ice cream cupcakes are so simple and a definite crowd pleaser, they will be in high demand at every gathering.

Seriously-when we heard about these new Peanut Butter & Cocoa Pebbles (which can be found at Walmart), we knew we had to make something with it because… YUM!

And since it’s summer and ice cream is on our mind, this is what we came up with. Click on the offer below to earn cash back!

Easy Mini Ice Cream Cupcakes:

Are you ready to dig in? Once you take a bite, you won’t want to stop. And the cherry (or rather the candy) on top is how simple these little beauties are to make. Let’s get started. Ingredients: We found everything we needed at our local Walmart, it made shopping super simple!

  • 2 1/2 Cups Peanut Butter & Cocoa Pebbles Cereal (Found at participating Walmart stores. You earn $1 cash back if you sign up here!)
  • 1 Cup Shelled Peanuts
  • 1/2 Cup Melted Butter
  • 1 Cup Brown Sugar
  • Soft Vanilla Ice Cream
  • 1/2 Cup Melted Peanut Butter
  • 1/2 Cup Chocolate Sauce or Hot Fudge
  • Whip Cream
  • Chocolate & Peanut Butter Candy (optional)

Let’s get cooking, or rather, let’s get freezing!

Instructions:

Crust-

  • Mix together the Peanut Butter & Cocoa Pebbles, shelled peanuts, and brown sugar in a bowl.

Easy Ice Cream Cake Recipe

  • Add melted butter and mix together. Mixture will be loose.

  • Scoop a layer into greased muffin tin and press down.

  • Add vanilla ice cream on top of the crust filling each tin to the top. Smooth the top of the ice cream and give the muffin tin a slight tap to get rid of air bubbles.
  • Place in the freezer for at least an hour, or until completely frozen.
  • Once frozen, drizzle top of the ice cream with chocolate sauce.
  • To get the cupcakes out of the muffin tins, simply use a knife and cut them away from the side of the tins. They will pop right out.

Ice cream cake recipe

  • Top with whipped cream, drizzled chocolate sauce, melted peanut butter, and candy.
  • Grab a spoon and dig in!!

Ingredients

Scale
  • 2 1/2 Cups Peanut Butter & Cocoa Pebbles Cereal (Found at participating Walmart stores)
  • 1 Cup Shelled Peanuts Slightly Chopped
  • 1/2 Cup Melted Butter
  • 1 Cup Brown Sugar
  • Soft Vanilla Ice Cream
  • 1/2 Cup Melted Peanut Butter
  • 1/2 Cup Chocolate Sauce
  • Whip Cream
  • Chocolate & Peanut Butter Candy (optional)

Instructions

  • Mix together the Peanut Butter & Cocoa Pebbles Cereal, peanuts, and brown sugar.
  • Add melted butter and stir. The mixture will be loose.
  • Place a scoop full in the bottom of a greased muffin tin and press in firmly. (You can also make these in a 9×13 pan)
  • Top the tins off with vanilla ice cream, filling them to the top.
  • Smooth out ice cream, and tap the tins to release extra air.
  • Freeze for at least one hour, or until completely firm.
  • Spread chocolate sauce over the top of each cupcake.
  • To release the cupcakes from the tin, simply glide a knife around the edges and they will pop right out.
  • Top with whip cream, drizzled peanut butter, chocolate sauce, and candy.
