Yesterday I joked with my husband about how even though it’s September now, there doesn’t seem to be a hint of Fall to be found around here. It’s just hot.

And then we went to a soccer game last night and there it was.

That little hint of coolness in the air that’s unexpected the first time you feel it. That teeny tiny whisper of a nip in the air that immediately has you thinking of falling leaves, cozy blankets and The Great Pumpkin.

And the smell of Fall baking. All it takes is 4 ingredients to make these easy pumpkin spice cookies and your house will smell like Autumn in minutes. 

And I love the smell of Autumn in my kitchen. Who’s with me?

These cookies will only take about 5 minutes to mix, 10 minutes of baking and then one bite and you’ll be transported straight out of summer and into Fall. Are you ready for that? (Bye summer! I really love you, but we’re also excited for Fall.)

Easy 4 Ingredient Pumpkin Spice Cookies

These easy pumpkin spice cookies only need 4 ingredients and taste like a piece of Fall.

Ingredients

• 1 white cake mix
• 1/2 C canned pumpkin (with spice in it. If you can’t get it with spice, add 1/2 tsp cinnamon and a few shakes of all spice)
• 1 egg
• 1/4 C softened butter
• Optional: cream cheese frosting
• Optional: cinnamon sugar

Instructions

Preheat oven to 350 degrees. Combine the ingredients in a large bowl and mix.

This dough will be sticky. Grab some cooking spray or vegetable oil and spread it on your hands, then roll into balls about 1 inch in size and place on a greased cookie sheet.

Gently press the balls down a little bit.

Bake for 10-12 minutes.

Allow to cool and then pipe on cream cheese frosting if desired.

 

Notes

For a fun addition to this cookie, you can roll the dough in cinnamon sugar before baking.

There’s a cute little place down the road from me that sells nothing but desserts. (Hello!) It’s in a little old house that’s been turned into a little restaurant. You can order your dessert, then go sit on a couch in the living room to eat it. It’s cute, it’s quaint, but most importantly, the desserts are AMAZING!

The best thing you can get at this fabulous little restaurant is warm cookie dough baked almost to a cookie state…but not quite. It’s warm and soft and chocolatey and gooey and it’s served with ice cream on top. And sometimes I eat the whole thing. By myself. (And it’s not a small dessert.) But sometimes I make these fabulous things at home. If you want to try this dream come true and need to know how to make a pizookie, I’m your hero today. Because all pizookies are amazing, but this pizookie recipe with chocolate, peanut butter and Reese’s, it doesn’t get any better.

Seriously people. Nothing. Beats. A Pizookie! Especially one with chocolate and peanut butter and Reese’s and ice cream and chocolate topping!

If you haven’t had one, it’s just cookie dough that is half baked-baked until it is warm and gooey and perfect. Then topped with ice cream and in this case, Reese’s pieces AND peanut butter cups.

This chocolate peanut butter pizookie recipe is perfection in a ramekin. Warm and gooey cookie dough baked almost to cookie state but left a little soft and topped with ice cream, the accented with Reese’s.

Ingredients

Chocolate Cookie Recipe Ingredients:

• 1 C butter (or 2 sticks) softened or melted
• 1 C sugar
• 1 C brown sugar
• 1/2 C cocoa
• 2 eggs
• 1 tsp salt
• 1 tsp baking soda
• 1 Tbsp vanilla
• 2 1/4 C flour

 Peanut Butter Cookie Recipe:

• 1 C butter, softened or melted
• 1 C sugar
• 1 C brown sugar
• 1 C creamy peanut butter
• 2 eggs
• 1 teaspoon baking soda
• 1 teaspoon baking powder
• 1 teaspoon salt
• 2 teaspoons vanilla extract
• 2 1/2 C flour

Additional Ingredients:

• Reese’s Pieces
• Reese’s Peanut Butter Cups
• Ice cream
• Hot fudge or chocolate topping

Instructions

Preheat oven to 375 degrees.

Prepare both of your doughs.

Bake approximately 10 minutes-till slightly crispy on the outside but still soft on the inside. (This will vary a little depending on the size of your bowl.) The main thing is to make sure that it is warm all the way through.

Top with ice cream and serve hot. (You’ll want some coasters or something to serve it on since it’s hot.)

Here’s a truth about me-if it’s not chocolate, I don’t typically waste the calories to eat it. So even though I love to bake anything and everything, I’m not very tempted by fruity desserts.

But when I took a bite of one of these easy lemon cookies that I made for the lemon themed bridal shower and started raving about how good they turned out. These cookies are GOOD! So good and SO easy to make!

Guess what? Only 3 ingredients in these easy lemon cookies! Anyone can make these and wow their friends!

Plus they look so pretty don’t they? And really, these things will take you only a few minutes and a few ingredients to make! You can’t beat that, can you?

Easy Lemon Cookies:

Easy Lemon Cookies Recipe

These easy lemon cookies only use 3 ingredients, are super easy to make and taste amazing! Made from a cake mix and they are soft and chewy. Great when drizzled with frosting too.

Ingredients

• 1 lemon cake mix
• 1 egg
• 1 stick of butter (softened)

Instructions

Preheat oven to 350 degrees.

Mix the three ingredients to form a nice dough. Roll into 1 inch balls and bake for about 7-10 minutes. When they start to crack, take them out.

Optional: drizzle with frosting. (See recipe below.)
