Yesterday we joked with each other about how even though it’s September now, there doesn’t seem to be a hint of Fall to be found around here. It’s just hot.
And then we went to a soccer game last night and there it was.
That little hint of coolness in the air that’s unexpected the first time you feel it. That teeny tiny whisper of a nip in the air that immediately has you thinking of falling leaves, cozy blankets and The Great Pumpkin.
And we love the smell of Autumn in our kitchens. Who’s with us?
These cookies will only take about 5 minutes to mix, 10 minutes of baking and then one bite and you’ll be transported straight out of summer and into Fall. Are you ready for that? (Bye summer! We really love you, but we’re also excited for Fall.)Print
Easy 4 Ingredient Pumpkin Spice Cookies
These easy pumpkin spice cookies only need 4 ingredients and taste like a piece of Fall.
- 1 white cake mix
- 1/2 C canned pumpkin (with spice in it. If you can’t get it with spice, add 1/2 tsp cinnamon and a few shakes of all spice)
- 1 egg
- 1/4 C softened butter
- Optional: cream cheese frosting
- Optional: cinnamon sugar
Preheat oven to 350 degrees. Combine the ingredients in a large bowl and mix.

This dough will be sticky. Grab some cooking spray or vegetable oil and spread it on your hands, then roll into balls about 1 inch in size and place on a greased cookie sheet.
Gently press the balls down a little bit.
Bake for 10-12 minutes.
Allow to cool and then pipe on cream cheese frosting if desired.
For a fun addition to this cookie, you can roll the dough in cinnamon sugar before baking.
