Yesterday I joked with my husband about how even though it’s September now, there doesn’t seem to be a hint of Fall to be found around here. It’s just hot.
And then we went to a soccer game last night and there it was.
That little hint of coolness in the air that’s unexpected the first time you feel it. That teeny tiny whisper of a nip in the air that immediately has you thinking of falling leaves, cozy blankets and The Great Pumpkin.
And the smell of Fall baking. All it takes is 4 ingredients to make these easy pumpkin spice cookies and your house will smell like Autumn in minutes.

These cookies will only take about 5 minutes to mix, 10 minutes of baking and then one bite and you’ll be transported straight out of summer and into Fall. Are you ready for that? (Bye summer! I really love you, but we’re also excited for Fall.)

These easy pumpkin spice cookies only need 4 ingredients and taste like a piece of Fall.
Ingredients
- 1 white cake mix
- 1/2 C canned pumpkin (with spice in it. If you can’t get it with spice, add 1/2 tsp cinnamon and a few shakes of all spice)
- 1 egg
- 1/4 C softened butter
- Optional: cream cheese frosting
- Optional: cinnamon sugar
Instructions
Preheat oven to 350 degrees. Combine the ingredients in a large bowl and mix.

This dough will be sticky. Grab some cooking spray or vegetable oil and spread it on your hands, then roll into balls about 1 inch in size and place on a greased cookie sheet.
Gently press the balls down a little bit.
Bake for 10-12 minutes.
Allow to cool and then pipe on cream cheese frosting if desired.
Notes
For a fun addition to this cookie, you can roll the dough in cinnamon sugar before baking.
